ZS Hospitality joined hands with Milanese trattoria Trippa Milano in their latest revamped project. Situated in the third level of 8 Lyndhurst Terrace, Central, Testina is the first of three to be unveiled in its prime location, presenting a fresh perspective on elevated Italian fare.
Originated in June 2015 in Milan, Trippa has been one of the most sought-after restaurants since then. Expertly founded by Michelin-starred-trained Chef Diego Rossi and partner Pietro Caroli, Trippa notched the Best Trattoria in Italy by the Guida Ristornati de L’Espresso, paying homage to the nose-to-tail culinary approach.
Reflecting the spirit in Testina–“head” in Italian, the compact menu honours not only quality and celebrated parts of animals, but also often-overlooked, lesser-known local and Italian produces. It is the perfect marriage of time-honoured recipes passed down from generations and the craftsmanship and creativity of Chef Marco Xodo, who helmed two-Michelin starred Otto e Mezzo BOMBANA Shanghai previously.
Several distinctive dishes are Roasted Bone Marrow – a feast for the eyes and the palate, and Homemade Pappardelle with Lamb Ragù – succulent and tender. Perfect the plates with masterful selections of Italian wine, boasting 20% organic biodynamic wines.
Testina will begin its soft-opening on 9th February 2022, bringing discerning diners to a nostalgic Milanese trattoria in the 70s.
